Almost every household ends up with a few leftover rotis after the daily cooking. Nobody wants to eat the same rotis again the next day, and they often end up being thrown away. But few people know that these leftover rotis can be turned into a tasty and crispy roti cutlet for breakfast.

The best part of this recipe is that it does not require any special or expensive ingredients. The cutlets can be made easily using vegetables, everyday spices and other simple ingredients already available at home. This easy recipe uses whatever vegetables are on hand, and is likely to be liked by everyone in the family, from children to elders.

The ingredients needed for roti cutlets are: 4 to 5 leftover rotis, 2 boiled potatoes, 1 finely chopped onion, half a cup of finely chopped carrot or any other available vegetable, 1 to 2 green chillies, coriander leaves, half a teaspoon red chilli powder, half a teaspoon cumin powder, half a teaspoon chaat masala, salt to taste, bread crumbs or semolina, and oil for frying.

To prepare, first cut the leftover rotis into small pieces and grind them finely in a mixer. Take out this finely ground roti mixture into a large bowl and mix in the well-mashed boiled potatoes. Then add the finely chopped onion, carrot or whichever vegetable is available, green chilli and coriander leaves. Add red chilli powder, cumin powder, chaat masala and salt, and mix everything together well.

If the mixture feels loose or thin, a little bread crumbs or semolina can be added to it. Apply a little oil to your hands, shape the mixture into small balls, and gently flatten them into the shape of cutlets. Heat a pan, add a little oil, and shallow fry the prepared cutlets on both sides until golden and crispy. Serve the hot roti cutlets with chutney, tomato sauce or curd.

For an extra crispy cutlet, a light coating of semolina or bread crumbs can be applied on the outside. Peas, beetroot or cabbage can also be added to the vegetable mix as preferred. This way, a tasty and filling breakfast can be made at home in less time and with minimal ingredients.
