Ganeshotsav 2026: Make thick, rich sabudana kheer in 10 minutes
A quick recipe for a rich, rabri-like sabudana kheer using sago, milk, dry fruits and saffron for the festive season
Households prepare various sweet dishes for festivals, with vermicelli kheer, gulab jamun, basundi and semolina kheer being repeated every time. This time, a handful of sabudana can be used instead of these usual dishes to make a thick, rich sabudana kheer. The kheer tastes good and is also considered beneficial for health.
During fasting days, this sweet sabudana kheer can be eaten instead of spicy or oily food. A common problem while making kheer is that the milk curdles or the kheer sticks to the pan. But if made using the method described below, neither does the taste get spoilt nor is there a hassle of it sticking. Different dishes are prepared at home each time as an offering for Ganpati Bappa, and this tasty sabudana kheer can be included among them.
For this, sabudana, sugar, cashews, almonds, cardamom powder, figs, chironji, saffron, salt and ghee are needed.
To prepare it, first heat milk in a pan. Once the milk comes to a boil, lower the flame and let it simmer. Then add saffron strands to the hot milk and mix well. After this, add pre-soaked sabudana and cook it well. Once cooked, the sabudana completely changes colour. While cooking the sabudana, keep stirring continuously with a spoon so that it does not stick to the pan.
Once the sabudana is well cooked, add cashews, almonds, dried dates, figs and chironji roasted in ghee, mix well and let it come to a boil. Finally, after mixing all the ingredients properly, add sugar and a pinch of salt. This is how a thick, rich, rabri-like sabudana kheer is prepared in an easy way, which everyone at home will like a lot.
